Preheat Time and Temperature Selector:

Proofing: Do not preheat (90°-110°F)

Low: Preheat 10 min. (140°-170°F)

Medium: Preheat 15 min. (170°-200°F)

If you will be using the removable tray, preheat it while preheating the warming drawer.

The warming drawer is designed to keep previously cooked foods at a safe, warm temperature for extended periods. It is not designed to cook or reheat food. Food may be kept up to two hours in the warming drawer.

The dial on the top right corner of the unit is the on/off and temperature control adjustment. When the dial is turned clockwise from the ‘off’ position to the ‘proof’ (P) position, the unit will maintain a temperature of approximately 100°F. By rotating the dial clockwise to the ‘high’ (H) position, the drawer will reach a temperature of approximately 250°F.

To Use: Turn the thermostat dial to a temperature setting:

H – High

M – Medium

L – Low

P – Proofing

After preheating, add cooked, hot food in its cooking container or a heat-safe container. Aluminum foil may be used to cover food containers.

Caution: Do not use plastic containers or plastic wrap. They can melt if in direct contact with the drawer or a hot utensil and if these items melt, they may adhere to the drawer and may be unremovable. Use only heat-safe dishes.


How do I proof yeast dough in the FISHER & PAYKEL OD30WDX1?

Place dough in a greased jelly roll or half sheet pan or oiled bowl, no taller than five inches in height. Turn dough over to grease all areas of the dough, and cover with a damp clean cloth. Place it in the center of the warming drawer and turn the control knob to proofing (P). Check at 45 minutes to one hour; the dough should double in size. Shape the dough, place it in a baking pan, and put it in the warming drawer for a second rising of about 30 to 45 minutes. Add extra time if needed.

Ensure the unit is turned off, cool, and empty before starting.

1. First, remove any plates, trays, etc., from the drawer.

2. Pull the drawer open towards you all the way until it reaches the stop position.

Note: Removing the drawer for the very first time requires extra force.

1. To reinstall the drawer, push the slides fully inside the unit.

2. Position the drawer in front of the cavity and align the slides.

3. With the slides aligned, push the drawer all the way inside.

NOTE: When the drawer is re-installed, the slides may feel stiff and hard to push in. This is normal. Pull the drawer back out to realign the rollers. The drawer should now feel smooth and free.

The latch can be repositioned vertically by adjusting the two torx screws. The force necessary to open and close the drawer can be changed by adjusting the two flathead screws.
