What are the stages of pressure cooking with the INSTANT POT PRO 60?

When pressure cooking, the INSTANT POT PRO 60 goes through 3 stages:

Pre-heating
What you see What you don’t see Tips
The cooking progress bar shows Pre-heating. The display shows On. While the multicooker pre-heats, it evaporates liquid to create steam. Once enough steam has built up, the float valve pops up and locks the lid in place. The time it takes to pressurise depends on food and liquid temperature and volume. Frozen foods have the longest pre-heating time. For fastest results, thaw your food before cooking it.
Cooking
What you see What you don’t see Tips
The cooking progress bar moves over to Cooking. The display switches to the cooking countdown timer. When the Instant Pot reaches the required pressure level, cooking begins. The multicooker automatically maintains High or Low pressure throughout cooking. A higher pressure means a higher temperature. Smart Programme settings can be adjusted at any time during cooking.
Depressurisation
What you see What you don’t see Tips
If Keep Warm is on, the progress bar moves to Keep Warm and the timer counts up from 00:00. If not, the multicooker displays End. Although food has finished cooking, the pressure cooker is still pressurised and hot. Venting the pressure lowers the temperature and allows you to safely remove the lid. Follow your recipe instructions for choosing a venting method. The Instant Pot cools faster if Keep Warm is turned off.

How do I release pressure from the INSTANT POT PRO 60?

You must release pressure after pressure cooking before opening the lid. There are three methods:

1. Natural Release (NR or NPR): Cooking stops gradually as the temperature drops and the cooker depressurises naturally over time. This is also called “carryover cooking” and is great for large cuts of meat.

What to do: After cooking, leave the quick release switch in the Seal position until the float valve drops into the lid.

What to expect: Your meal continues to cook. The time varies based on volume and temperature, and can take up to 40 minutes.

NOTICE: Use NR for high-starch foods (soups, stews, pasta, oatmeal) or foods that expand (beans, grains).

2. Quick Release (QR or QPR): Stops cooking quickly to prevent overcooking. Perfect for quick-cooking vegetables and seafood.

What to do: Move the quick release switch from Seal to Vent and wait for the float valve to drop into the lid.

What to expect: You’ll hear a muffled hiss as steam disperses. If the cover is not installed properly, a loud jet of steam will be ejected.

NOTICE: Do not use QR for fatty, oily, thick, or high-starch foods, or for foods that expand when cooked.

3. Timed Natural Release: Carryover cooking continues for a specific time, then stops quickly when you release the remaining pressure. Perfect for rice and grains.

What to do: Leave the quick release switch in the Seal position for the time specified in your recipe, then move it to Vent and wait for the float valve to drop.

What to expect: A muffled hiss. If spatter occurs, move the switch back to Seal, wait a few minutes, then try again. If spatter continues, use NR.

How do I open and close the pressure cooking lid on my INSTANT POT PRO 60?

Removing the lid:

1. Grip the lid handle and turn it anti-clockwise to align the symbol on the lid with the symbol on the rim of the multicooker base.

2. Lift the lid up and off the multicooker base towards your body.

Closing the lid:

1. Align the symbol on the lid with the symbol on the multicooker base, then lower the lid onto the track.

2. Turn the lid clockwise until the symbol on the lid aligns with the middle of the control panel.

When you close the lid, it automatically sets to Seal for pressure cooking. The lid is removable during non-pressure cooking. When pressure cooking, the lid only locks into place once the multicooker is pressurised.

What is the QuickCool™ feature on the INSTANT POT PRO 60 and how do I use it?

The QuickCool™ feature allows you to release pressure naturally up to 50% faster. It uses the QuickCool tray (sold separately).

To use the QuickCool tray:

1. Fill the tray with ice or water and freeze it.

2. Once frozen, remove the protective cover from the pressure cooking lid and position the QuickCool tray on the exposed metal of the lid.

3. When the float valve drops into the lid, remove the QuickCool tray, discard the water, and open the lid.

CAUTION: The metal portion of the lid gets extremely hot. Do not touch the exposed metal with bare skin to avoid injury. Do not remove the protective cover unless you are using the QuickCool feature.

How do I use and maintain the steam release assembly on the INSTANT POT PRO 60?

The steam release assembly must be fully installed before use. It disperses steam gently during quick release.

To remove the steam release assembly:

1. Remove the steam release cover.

2. Pull the steam release valve up and off the steam release pipe.

To install the steam release assembly:

1. Place the steam release valve on the steam release pipe and press down firmly. The valve sits loosely but should remain in place when the lid is turned over.

2. Place the steam release cover over the steam release valve and press down. The cover pressure-fits in place.

When releasing pressure, steam travels from the inner pot, through the steam release pipe, and out from the top of the steam release valve. It is important to keep this area clean and clear.

How do I handle the sealing ring for my INSTANT POT PRO 60?

The sealing ring creates an airtight seal between the lid and inner pot and must be installed before use. Only one sealing ring should be installed at a time.

To remove the sealing ring:

Grip the edge of the silicone and pull the sealing ring out from behind the circular stainless steel sealing ring rack.

To install the sealing ring:

Place the sealing ring over the sealing ring rack and firmly press it into place. Ensure there is no puckering. It should be snug behind the rack and may wiggle slightly but should not fall out when the lid is turned over.

Maintenance:

• Silicone is porous and can absorb aromas. Keep extra rings to avoid flavour transfer between dishes.

• Check for cuts, deformation, or damage before cooking. Do not use if stretched, deformed, or damaged.

• Replace the sealing ring every 12 to 18 months or sooner, and only use authorised Instant Pot sealing rings.

What is the float valve on the INSTANT POT PRO 60 and what do its positions mean?

The float valve indicates whether there is pressure in the multicooker. It has two positions:

Pressurised: The float valve has visibly popped up above the surface of the lid.

Depressurised: The float valve has dropped, and its top is flush with the lid or below.

The float valve and silicone cap must be installed to seal in pressurised steam. Do not touch the float valve during use. Do not attempt to remove the lid while the float valve is up.
