How do I raise and lower the mixing head on the SUNBEAM MIXMASTER HERITAGE 2364?
To raise the mixing head, locate the Tilt-Release Lever at the base of the Head Support. While the lever is depressed, hold the handle of the head and tilt the head of the Stand Mixer back. The mixing head will lock into position. Lowering the mixing head is a simple matter of lifting the head slightly to disengage the locking mechanism and pressing the mixing head downward. A “click” sound will be heard which will indicate the mixer head has locked into position.
How do I attach the mixing bowls to the SUNBEAM MIXMASTER HERITAGE 2364?
Adjust the turntable to the proper setting: the large bowl for off-center use and the small bowl for center use. Place the mixing bowl on the turntable. A bowl ring is provided for each glass bowl and must be used whenever mixing.
Note: Mixing bowls should not be used in a conventional oven, microwave oven, or on a stovetop. Glass is breakable. Handle with care. Avoid sudden temperature changes. Do not place hot bowl on wet or cold surface.
How do I attach the beaters or dough hooks to the SUNBEAM MIXMASTER HERITAGE 2364?
Make sure the mixer is OFF and unplugged.
Insert attachments into sockets located under the mixer head. The beater with the “Circle with a Dot” on the stem fits the socket with the “Circle with a Dot” on the mixer head. Insert the beater into this socket first. The attachment will turn clockwise. Insert the remaining attachment into the other socket. This attachment will turn counter-clockwise. To engage attachments, slightly turn attachment as you push upward until the attachment clicks into place. You can test to make sure the attachment is engaged by gently pulling on the attachment. The attachment should be locked into position and should not come out of the socket. To remove beaters/dough hooks from the mixer, simply push the ejector button on the rear of the mixer head. Be sure mixer is unplugged when removing attachments.
How do I operate the speed control dial on the SUNBEAM MIXMASTER HERITAGE 2364?
Turn the speed control dial to ON and OFF and for selecting mixing speeds (1 through 12).
Rotate the speed control dial in a clockwise direction to increase mixing speed, and counter-clockwise to decrease mixing speed.
Your MIXMASTER mixer is equipped with a soft start feature. When you turn on the mixer, it will start on a slow speed and then increase to the speed indicated on the top of the mixer head. This feature is intended to minimize splattering of ingredients from the mixing bowl.
For more control, you may select one of the numbered speeds that appear around the speed control knob.
When starting a mix, begin at a low speed and gradually increase to the desired speed. This prevents splattering.

Set the speed dial between 1 (STIR) and 4 (BLEND), depending on the amount of ingredients. Do not overbeat. Mix until all ingredients are just blended. The guide is a suggestion for mixing. Begin on Speed 1 and increase to desired speed for the particular mixing task.
