For safe handling of your GRAEF SKS 850, please observe the following safety instructions:

• Before using the device for the first time, check it for visible outer damages on the housing, connection cable, and plug. Do not operate a damaged unit.

• If the connection cable is damaged, it must be replaced by the manufacturer, the after-sales service, or a similarly qualified person in order to prevent danger.

The GRAEF SKS 850 is not intended for commercial use. Use the slicer in closed-up rooms only. It can be used to cut bread, ham, sausage, cheese, carrots, cucumber, fruit, vegetables, etc. By no means cut hard matter, such as frozen food, bones, wood, sheet metal, or the like. Any other use shall not be considered intended. This unit is intended for use in a household.

When unpacking the GRAEF SKS 850, proceed as follows:

• Remove the unit from the box.

What are the installation location requirements for the GRAEF SKS 850?

For safe and fault-free operation of the GRAEF SKS 850, the installation location must meet the following requirements:

• The unit has to be placed on a solid, flat, horizontal, and non-slipping surface with a sufficient weight-carrying capacity.

CAUTION! The very sharp blade can cut off body parts. Your fingers are especially at risk. For this reason, never reach into the space between the stop plate and blade as long as the stop plate is not completely closed (i.e. set to below “0”).


What is the trigger guard on the GRAEF SKS 850?

The GRAEF SKS 850 has been provided with a trigger guard as a protection against unauthorized use. The trigger guard fitted below the carriage is pressed in the direction of the power button without pressure on the safety switch button. The device can be switched on only when released.


What should I do before the first use of the GRAEF SKS 850?

Prior to first use, use a moist cloth to wipe the blade of the machine in order to remove any production residue. See the cleaning section for more details.

How do I use the GRAEF SKS 850 to slice food?

IMPORTANT! The unit must not be used without the end-piece holder, unless the size and shape of the slicing material permits.

CAUTION! Sharp blade! Observe the following safety instructions to prevent hazards and material damage:

• Do not touch the blade with your fingers. This is very sharp and can cause several injuries.

• The rotating blade can cut off body parts.

• Your fingers are at risk, especially your thumb.

• Check whether the blade cover plate is attached to the machine properly.

To use the slicer:

1. Insert the plug into the socket.

2. Place the slicing material on to the slide.

3. Place the holder for remainders on the rear wall of the slide at the slicing material.

4. Set the requested cutting thickness.

5. Either press the thumb against the switch for intermittent cutting or turn the switch for continuous cutting clockwise up to stop.

6. Press the slicing material lightly against the stop plate.

7. Evenly move the slide towards the blade.

8. Remove the thumb from the switch for intermittent cutting or turn the switch for continuous cutting counter-clockwise to end the cutting process.

TIP: Soft slicing material (such as cheese or ham) can be cut best when chilled. Soft slicing material can be cut better when moved forward slowly. Cucumbers or carrots should be brought to a uniform size before cutting.

IMPORTANT! After a continuous operation of 10 minutes, let the motor cool down for an hour.


How do I operate the knife drawer and chopping board on the GRAEF SKS 850?

The practical chopping board made of oiled beech wood is used to enlarge the cutting surface by pulling it forward a bit. When you take out and turn the chopping board, you have a useful decorative cutting material support with a juice rim. A beech wood drawer is integrated into the base plate for storing kitchen knives.

To open the drawer, press the two child safety locks at the same time, which are on the right and left side of the base plate.

You can remove the drawer completely for cleaning by pulling it right up to the end stop and pressing the two child safety locks. When pushed back in, the end stop snaps in automatically and audibly.

The easy-to-clean beech wood parts must not be cleaned in the dishwasher. Clean the wooden parts by using a damp cloth. If the wood color grows pale, rubbing with edible oil will help.


How do I clean the exterior of the GRAEF SKS 850?

CAUTION! Watch the following safety instructions before starting to clean the unit:

• Switch the unit off before cleaning and pull the power cord from the electric socket.

• Let the unit cool down before cleaning.

• Do not use any aggressive or abrasive detergents and no solvents.

• Do not scratch off stubborn soiling with hard objects.

• Do not put the unit in the dishwasher and do not use it under running water.

Use a soft and moist cloth to clean the outer surfaces of the unit. Use a mild detergent in case of heavy soiling.


How can I preserve the value and sharpness of the blade on my GRAEF SKS 850?

For long-lasting sharpness and value retention of your Graef blade, it is recommended to clean it in regular intervals, especially after cutting up salted meat and/or ham. These foodstuffs contain salts, which can form a rust film if left on the blade surface for a longer period.

When cutting up slicing material which contains a lot of water, such as tomatoes or cucumbers, lacking or wrong (too “wet”) cleaning may also lead to a rust film on the blade surface. For this reason, we recommend cleaning the blade directly after use with a moist cloth, and if necessary some washing-up liquid. From time to time, unscrew the blade and clean the unit on the inside, especially when “juicy” slicing material has been cut. Treat the blade with the utmost care.


What are the general cleaning and maintenance instructions for the GRAEF SKS 850?

IMPORTANT! Watch the following safety instructions before starting to clean the unit:

• Make sure that the unit is switched off and is not connected to the power supply.

• Check whether the stop has been closed (the blade edge must be covered).

• Do not use any aggressive or abrasive detergents and no solvents.

• Do not scratch off stubborn soiling with hard objects. Do not rinse the unit with water or immerse in water.


How do I remove the carriage for cleaning on the GRAEF SKS 850?

In order to clean the slide better, it can be removed from the unit.

1. Use a finger to press the carriage locking mechanism upwards.

2. Keep the carriage locking mechanism pressed and pull the slide towards yourself.

3. Use a moist cloth or running water to clean all parts.

Important: Do not clean the slide in a dishwasher!

Once a month, add some drops of resin-free oil or petroleum jelly to the slideway. Use a soft cotton wool cloth to remove excessive oil / petroleum jelly.


How do I remove the blade cover plate and the blade on the GRAEF SKS 850?

CAUTION! Sharp blade!

1. Remove the plug from the socket.

2. Remove the slide.

3. Use the black handle grip to turn the blade cover plate in the direction of the arrow upwards until it is vertical over the motor body. During this action, the snap point has to be overcome first of all.

4. Applying slight pressure, the plate can be removed.

5. Undo the blade by using a coin to turn the blade screw clockwise.

6. Undo the blade from the machine.

CAUTION! Proceed with caution when wiping the blade. Clean the inside of the blade using a damp cloth. Also, remove and clean the black wiper ring from the machine using a damp cloth. Clean the inside of the machine with a damp cloth.

IMPORTANT! Never put the blade into the dishwasher which may affect the sharpness and the corrosion resistance (salt attacks the blade). Handling the blade when loading and unloading from the dishwasher is another danger point.


How and when should I grease the blade mechanism of the GRAEF SKS 850?

Regular greasing will increase the service life of your GRAEF SKS 850. For this purpose, exclusively use Graef petroleum jelly which is matched to our units.

CAUTION! Sharp blade! Proceed with utmost care when greasing the blade.

• Grease the gearwheel with petroleum jelly.

• Grease the blade bolt with petroleum jelly.

• Also grease the blade screw with petroleum jelly.

• Place the wiper ring in the unit again.

• Grease the wiper ring with petroleum jelly.

• Refit the blade and the blade cover plate.

IMPORTANT! Grease the machine in regular intervals:

• In case of frequent use, every two to three days.

• When the machine runs for 10 minutes every day, every fortnight.

• Use Graef petroleum jelly only.
