7. Bolt the kettle down securely. To fulfill NSF requirements, seal the unit by applying Silastic or an equivalent sealing compound to the bolt heads and around the flanges where they make contact with the floor. Wipe off any excess sealant immediately.

6. Rinse the kettle and valve with clean warm water.
7. It is recommended to leave the draw-off valve open when the kettle is not in use.

You should vent your CROWN EL-100 if the vacuum/pressure gauge does not read in the green vacuum zone when the kettle is cold. This procedure removes trapped air for proper heating.
WARNING: SCALD HAZARD. Live steam will escape the bleed nut when it is opened. Stay clear of the live steam when performing this operation.
1. With the kettle empty, place the power switch in the ON position.
2. Set the temperature control thermostat to its highest setting, ’10’. Heat the kettle until the indicator light goes off.
3. Using a 7/16″ wrench, carefully open the bleed vent one full turn for exactly 10 seconds, and then close it securely.
4. Allow the kettle to cool down completely. Once cool, check the gauge for a proper vacuum reading in the green vacuum zone. If the reading is still not low enough, you must repeat the entire procedure, steps 1 – 4.
