How does the CROWN EL-80 steam jacketed kettle function?
The CROWN EL-80 is an electrically powered self-generating steam kettle. It consists of a jacket charged with a solution of water and antifreeze that completely immerses and protects the replaceable electric heating elements.
When the Power Switch is turned ON and the Temperature Control (Thermostat) Knob is dialed, the TEMPERATURE pilot light will come on, and contactors will close to allow power to the elements. Steam generation begins and continues until the water in the jacket reaches the preselected temperature. At this point, the Temperature Control de-energizes, opening the contactors and cutting off power to the heating elements, and the TEMPERATURE pilot light will go off. When the temperature of the water in the jacket drops slightly, the cycle repeats to maintain the selected cooking temperature.
The air has been removed from the kettle jacket during factory testing. The Pressure Gauge should indicate a vacuum in the jacket (in the green vacuum zone, approximately 25 – 30 inches Hg) when the kettle is cold. It is important not to trip the safety relief valve during inoperative periods, as this will break the vacuum seal and allow air to enter the jacket.
A Safety Probe is incorporated in the circuit to sense water level depletion in the jacket. If the water level drops, it will activate the LOW WATER level indicator pilot light and signal the Liquid Level Control to switch off power to the heating elements, preventing element burnout.
What are the operating instructions for the CROWN EL-80?
1. Ensure that the external electrical service to the kettle is on.
2. Check the pressure gauge for the correct cold kettle reading. The reading should be in the green area of the gauge, indicating 25 – 30 In. Hg (630 – 730 mm Hg) of vacuum. If the reading is not low enough, follow the VENTING procedure in the Troubleshooting section before using the kettle.
3. Place the power switch to the ON position.
4. Preheat the kettle by placing the thermostat knob at ’10’ and wait until the TEMPERATURE light goes off. Preheating should not be used when cooking milk and egg food products which adhere to hot cooking surfaces; these foods should be placed into the kettle before heating begins.
5. Add food to be cooked into the kettle.
6. Place the thermostat knob at the required temperature setting from 1 to 10.
7. When cooking is finished, set the thermostat knob and power switch to the OFF position.
8. Empty the product from the kettle using the draw-off valve. Be careful to avoid splashing.
9. Add water to the kettle for cleaning purposes and wash thoroughly.

2. Put the plug in a plastic pail that contains a mild soap solution to reduce the possibility of nicking or scratching the plug.
3. Use a soft cloth or soft brush and clean all surfaces of the plug.
4. Using both hands, remove the valve plug from the soap and rinse well in another plastic pail that contains fresh water.
5. Wash out the kettle as normal.
6. Once the kettle is washed out, return the plug into the body. Be sure the plug is inserted into the notch and turned. Ensure the plug is tight and secure before letting go of it.
What should I do if surface rust appears on my CROWN EL-80?
Metal utensils should never be used as they will scratch the surface of the equipment and rust may begin to form. To remove surface accumulation of rust, the following procedure may be used:
1. Use undiluted white vinegar with a non-abrasive scouring pad (plastic) or cloth on the affected area to remove the rust stain. The appliance should not be heated and should remain at room temperature during the entire cleaning process.
2. If the stain resists removal, additional exposure time with vinegar may be required, up to a maximum of one hour.
3. Thoroughly wash all of the vinegar away with fresh clear water. Dry the surface completely and allow one hour before using the appliance to cook.
How should I maintain the stainless steel surfaces and control panel of my CROWN EL-80?
Stainless Steel Surfaces:
To remove normal dirt, grease, or product residue, use ordinary soap and water (with or without detergent) applied with a sponge or cloth. Dry thoroughly with a clean cloth. Never use vinegar or any other corrosive cleaner.
To remove grease and food splatters that have baked on, apply a cleanser to a damp cloth or sponge and rub the cleanser on the metal in the direction of the polishing lines. Rub gently to avoid marring the finish. NEVER RUB WITH A CIRCULAR MOTION.
For stubborn soil and burn deposits, use SCOTCH-BRITE™ or STAINLESS scouring pads. DO NOT USE ORDINARY STEEL WOOL, a wire brush, scraper, file, or other steel tools, as they can damage the surface and cause rust.
To remove heat tint (darkened areas from excessive heat), use the cleaning methods above. For persistent tint, a vigorous scouring in the direction of the polish lines with SCOTCH-BRITE™ or a STAINLESS scouring pad in combination with a powdered cleanser may be necessary.
Control Panel:
The textured control panel should be cleaned with warm water and mild soap. Never use an abrasive cloth, steel wool, or cleaning solvents with a hydrocarbon base.
How do I perform a safety valve test on my CROWN EL-80?
Under normal operating conditions, a “try lever test” should be performed every two months. Under severe service conditions or if corrosion/deposits are noticed, testing must be performed more often. A test should also be performed at the end of any non-service period.
WARNING: Hot, high-pressure fluid may be discharged. High sound levels may be experienced. Wear proper safety equipment and exercise extreme care.
Test at, or near, half of the operating pressure by holding the test lever fully open for at least two seconds to flush the valve seat free of sediment and debris. Then release the lever and permit the valve to snap shut.
If the lift lever does not activate, or there is no evidence of discharge, turn off the equipment immediately and contact a licensed contractor or qualified service personnel.
What should I do if the LOW WATER signal light comes on for my CROWN EL-80?
If the water in the jacket is below the required operating level, the CROWN EL-80 will automatically shut off and the LOW WATER signal light will come on. To operate the kettle, follow this procedure:
1. The kettle must be cool before proceeding.
2. Trip the safety relief valve lever to relieve all pressure from the kettle jacket.
3. At the exterior rear of the kettle jacket, remove the nut from the Air Vent.
4. Insert a funnel into the Air Vent opening and slowly add the indicated amount of clean water for your model.
5. Replace the air vent nut.

Why is my CROWN EL-80 cooking time extremely slow?
If cooking time is abnormally slow, the issue may be due to air being present in the kettle jacket. To remove air, follow the AIR VENTING INSTRUCTIONS.
If the kettle will not reach and maintain the Pressure Gauge zone in the green area on the gauge when cold, a slow leak may have developed in the jacket. Check all fitting connections to the jacket, including the heating element gasket. Tighten or replace if necessary.
Slow cooking time may also be due to a burnt-out heating element. Test the elements, and if defective, replace the complete element assembly.
What should I do if my CROWN EL-80 will not operate when turned on?
1. Check that the power supply is available to the kettle.
2. The kettle will not operate if the water level is inadequate in the jacket. Follow the LOW WATER LEVEL instructions.
3. Check for a defective power switch or loose wire connections.
4. If the Thermostat Knob is dialed and the TEMPERATURE indicator light does not come on, the malfunction may be a defective Thermostat or a loose wiring connection.
5. If the TEMPERATURE indicator light comes on when the Thermostat Knob is dialed fully (to ’10’), the kettle should eventually reach its maximum temperature. If it does not, there may be an issue with the heating elements.
6. When the kettle is turned ON and the Thermostat Knob is dialed, check that the Contactors are being energized and that power is being made available to the heating elements. Replace defective Contactors if necessary.
What should I do if the draw-off valve on my CROWN EL-80 leaks?
If a leak occurs through the valve stem, replace the “O” ring.
If the leak is due to faulty sealing between the stem disc and the valve seat, this may be caused by dried-on food residue. Clean the dried-on food residue with an extremely fine emery cloth.
If the rubber vulcanized stem piece has been damaged, it must be replaced.
How do I perform the venting procedure on my CROWN EL-80?
Check the vacuum/pressure gauge when the kettle is cold. The gauge should be in the green vacuum zone. If not, air must be vented (removed) for proper heating. Use the following procedure to vent air.
1. With the kettle empty, place the power switch in the ON position.
2. Set the temperature control thermostat to ’10’. Heat the kettle until the indicator light goes off.
3. WARNING: SCALD HAZARD. Live steam will escape. Stay clear of live steam when performing this operation. Using a 7/16″ wrench, open the bleed vent one full turn for 10 seconds and then close it.
4. Cool the kettle. Check for proper vacuum in the green vacuum zone. If the reading is not low enough, repeat the entire procedure, steps 1 – 4.
