How do I install the CROWN EL-40 steam jacketed kettle?
The CROWN EL-40 kettle must be installed in accordance with state and/or local codes, and the National Electrical Code.
1. Set the kettle in the installation location.
2. With the kettle in position, place a carpenter’s level on top of the kettle and turn the adjustable feet to level the kettle side-to-side and front to back.
3. Mark hole locations on the floor through the anchoring holes provided in the flanged adjustable feet.
4. Remove the kettle and drill holes in the locations marked on the floor. Insert proper anchoring devices to accommodate 5/16″ size lag bolts (not supplied).
5. Reposition the kettle. Re-level the kettle by making necessary adjustments on the flanged feet.
6. Bolt down the kettle and seal with Silastic or other equivalent sealing compound. Sealant must be applied not only to bolt heads but also around flanges making contact with the floor surface to fulfill NSF requirements. Wipe off excess sealant immediately.
Electrical Connections:
A Control Box with a power supply equivalent to the electrical rating of the CROWN EL-40 should be located conveniently nearby. Remove the wiring compartment cover and make electrical connections per the wiring diagram located inside the control housing cover panel. A waterproof electrical connection from the power supply to the rear of the control housing must be provided. The kettle must be grounded in accordance with the National Electrical Code or applicable local codes. Ground the kettle to the terminal provided in the control housing. Once connections are made, replace the wiring compartment cover, turn the power ON, and check for proper operation.
What are the operating instructions for the CROWN EL-40 steam jacketed kettle?
Ensure that the external electrical service to the CROWN EL-40 kettle is on.
1. Check the pressure gauge for the correct cold kettle reading. The reading should be in the green area of the gauge indicating 25 – 30 In. Hg (630 – 730 mm Hg) of vacuum. If the reading is not low enough, follow the VENTING procedure in the Troubleshooting section prior to using the kettle.
2. Place the power switch to the ON position.
3. Preheat the kettle by placing the thermostat knob at ’10’ and wait until the TEMPERATURE light goes off.
NOTICE: Preheating should not be used when cooking milk and egg food products which adhere to hot cooking surfaces. These foods should be placed into the kettle before heating has begun.
4. Add food to be cooked into the kettle.
5. Place the thermostat knob at the required temperature setting from 1 to 10.
6. When cooking is finished, set the thermostat knob and power switch to the OFF position.
7. Empty the product from the kettle using the draw-off valve. Be careful to avoid splashing.
8. Add water to the kettle for cleaning purposes and wash it thoroughly.

How does the self-generating steam function work on the CROWN EL-40?
The CROWN EL-40 is a pressure vessel with a double-wall construction forming a sealed jacket around the lower two-thirds of the kettle bowl. This jacket is a self-contained, sealed chamber with a permanent solution of water and antifreeze that immerses and protects the replaceable electric heating elements.
When the Power Switch is turned ON and the Temperature Control knob is set, the TEMPERATURE pilot light comes on, and contactors close to allow power to the heating elements. Steam generation begins and continues until the water in the jacket reaches the preselected temperature. At this point, the thermostat de-energizes the contactors, cutting off power to the elements, and the TEMPERATURE pilot light goes off. When the jacket temperature drops slightly, the cycle repeats, maintaining a precise cooking temperature.
The jacket is factory-tested with air removed to create a vacuum, which should be indicated in the green zone of the pressure gauge (approx. 25 – 30 inches Hg) when the kettle is cold. It is important not to trip the safety relief valve during inoperative periods, as this will break the vacuum seal and allow air into the jacket, affecting performance.
How should I clean my CROWN EL-40 kettle after use?
Your CROWN EL-40 kettle should be cleaned immediately after each use. Before cleaning, check that the kettle has cooled enough to touch it. WARNING: Disconnect the power supply before cleaning. Never spray water into electric controls. The equipment and its parts are hot, so use care.
1. Rinse the inside of the kettle thoroughly and drain to remove any food particles.
2. Using a nylon brush, clean the kettle with a mild detergent and water. Never use steel wool or scouring powder as it will scratch the stainless steel.
3. Rinse the inside of the kettle thoroughly with clean water. Drain the kettle using the tangent draw-off valve to allow the detergent and water solution to drain.
4. Wipe the exterior of the kettle with a clean, damp cloth.
How do I clean the draw-off valve on the CROWN EL-40?
WARNING: If you are cleaning a valve that is assembled to a kettle, be sure the CROWN EL-40 is completely empty of any product.
NOTICE: The draw-off valve has a vulcanized rubber coated stem for better sealing. Do not over tighten. This may cause the rubber to pull away from the stem and permanently damage it. This is not covered under warranty.
1. Turn the large hex nut on the draw-off valve counterclockwise until it is completely disengaged from the threads.
2. Grasp the valve knob and slowly pull out the valve stem. Wash the valve stem, disk and handle.
3. Insert a nylon brush, wet with detergent and water, into the valve body and tangent draw-off tube. Brush vigorously.
4. Replace the valve stem assembly and turn the hex nut until snug. Rinse the kettle with clean warm water.
5. Leave the draw-off valve open when the kettle is not in use.
What should I do if surface rust appears on my CROWN EL-40?
Metal utensils should never be used as they will scratch the surface of the CROWN EL-40 and rust may begin to form. To remove surface accumulation of rust, the following procedure may be used.
CAUTION: Improper use of this procedure may damage your appliance!
1. Use undiluted white vinegar with a non-abrasive scouring pad (plastic) or cloth on the affected area to remove the rust stain. The appliance should not be heated and should remain at room temperature during the entire cleaning process.
2. If the stain resists removal, additional exposure time with vinegar may be required, up to a maximum of one hour.
3. Thoroughly wash all of the vinegar away with fresh clear water. Dry the surface completely and allow one hour before using the appliance to cook.
How do I care for the stainless steel surfaces of the CROWN EL-40?
To remove normal dirt, grease, or product residue from the stainless steel of your CROWN EL-40, use ordinary soap and water (with or without detergent) applied with a sponge or cloth. Dry thoroughly with a clean cloth. Never use vinegar or any other corrosive cleaner.
To remove grease and food splatters that have baked on, apply cleanser to a damp cloth or sponge and rub the cleanser on the metal in the direction of the polishing lines. Rubbing gently in the direction of the polished lines will not mar the finish. NEVER RUB WITH A CIRCULAR MOTION.
Soil and burn deposits that do not respond to the above can usually be removed by rubbing the surface with SCOTCH-BRITE™ or STAINLESS scouring pads. DO NOT USE ORDINARY STEEL WOOL. NEVER USE A WIRE BRUSH, STEEL SCOURING PADS (EXCEPT STAINLESS), SCRAPER, FILE OR OTHER STEEL TOOLS, as they can mar the surface and increase the possibility of corrosive attack.
TO REMOVE HEAT TINT: Darkened areas from excessive heat are caused by a thickening of the protective surface and are not harmful. Heat tint can normally be removed with the cleaning methods above, but stubborn tint requires vigorous scouring in the direction of the polish lines using SCOTCH-BRITE™ or a STAINLESS scouring pad with a powdered cleanser.
How do I perform safety valve maintenance and testing on the CROWN EL-40?
A “try lever test” should be performed on the safety valve of your CROWN EL-40 every two months under normal operating conditions. Under severe service conditions or if corrosion/deposits are noticed, testing must be more frequent. A test should also be performed at the end of any non-service period.
CAUTION: Hot, high-pressure fluid may be discharged. Care must be taken to avoid bodily contact. High sound levels may be experienced; wear proper safety equipment and exercise extreme care.
Test at, or near, half of the operating pressure by holding the test lever fully open for at least two seconds to flush the valve seat free of sediment and debris. Then release the lever and permit the valve to snap shut.
If the lift lever does not activate, or there is no evidence of discharge, turn off the equipment immediately and contact a licensed contractor or qualified service personnel.
What should I do if the LOW WATER light comes on for my CROWN EL-40?
If the water in the jacket of your CROWN EL-40 is below the required operating level, the kettle will automatically shut off and the LOW WATER signal light will come on. To operate the kettle, follow this procedure. The kettle must be cool before proceeding.
1. Trip the safety relief valve lever to relieve all pressure from the kettle jacket.
2. At the exterior rear of the kettle jacket, remove the nut from the Air Vent.
3. Insert a funnel into the Air Vent opening and slowly add the indicated amount of clean water for your model.

Why is my CROWN EL-40 cooking extremely slowly and how can I fix it?
If the cooking time on your CROWN EL-40 is abnormally slow, the difficulty may be due to air being present in the kettle jacket. To remove air, follow AIR VENTING INSTRUCTIONS.
If the kettle will not reach and maintain the Pressure Gauge zone in the green area on the gauge when cold, a slow leak may have developed in the jacket. Check all fitting connections to the jacket, including the heating element gasket. Tighten or replace if necessary.
Slow cooking time may also be due to a burnt-out heating element. Test elements and if defective, replace the complete element assembly.
What should I check if my CROWN EL-40 will not operate when turned on?
If your CROWN EL-40 will not operate, check the following:
1. Check that the power supply is available to the kettle.
2. The kettle will not operate if the water level is inadequate in the jacket. Follow the LOW WATER LEVEL instructions.
3. Check for a defective power switch or loose wire connections.
4. If the Thermostat Knob is dialed and the TEMPERATURE indicator light does not come on, it may be a defective Thermostat or a loose wiring connection. If the TEMPERATURE indicator light does come on when the knob is turned fully to ’10’, the kettle should eventually reach its maximum temperature.
5. When the kettle is turned ON and the Thermostat Knob is dialed, check that the Contactors are being energized and that power is being made available to the heating elements. Replace defective Contactors if necessary.
What should I do if the draw-off valve on my CROWN EL-40 is leaking?
If a leak occurs through the valve stem of your CROWN EL-40, replace the “O” ring. If the leak is from faulty sealing between the stem disc and valve seat, it may be due to dried-on food residue. Clean the dried-on food residue with an extremely fine emery cloth. If the rubber vulcanized stem piece has been damaged, it must be replaced.
NOTICE: The draw-off valve has a vulcanized rubber coated stem for better sealing. Do not over tighten. This may cause the rubber to pull away from the stem and permanently damage it, which is not covered under warranty.
What are the venting instructions for the CROWN EL-40?
Check the vacuum/pressure gauge on your CROWN EL-40 when the kettle is cold. The gauge should be in the green vacuum zone. If not, air must be vented (removed) for proper heating. Use the following procedure to vent air:
1. With the kettle empty, place the power switch in the ON position.
2. Set the temperature control thermostat to ’10’. Heat the kettle until the indicator light goes off.
3. Using a 7/16″ wrench, open the bleed vent one full turn for 10 seconds and then close.
WARNING: SCALD HAZARD. Live steam will escape the bleed nut when opened. Stay clear of live steam when performing this operation.
4. Cool the kettle. Check for proper vacuum in the green vacuum zone. If the reading is not low enough, repeat the entire procedure, steps 1 – 4.

The CROWN EL-40 uses DOWFROST™ HD Heat Transfer Fluid, Dyed. This fluid is intended for closed-loop systems. According to its Material Safety Data Sheet, it is not considered hazardous under WHMIS 2015 criteria.
