For safe handling of your GRAEF CM8011, please observe the following safety instructions:

• Before use, check the unit for any external visible damage to the housing, connection cable, and plug. Do not operate a damaged unit.

• Repairs may only be carried out by an expert or by Graef after-sales service.

• Defective parts must be replaced by original spare parts only.

• This appliance can be used by children from 8 years of age and persons with limited physical, sensory, or mental ability if they are supervised or have been trained in using the appliance safely.

• The unit and its connection cable must be kept clear of children younger than 8 years.

• Children should be supervised to ensure they do not play with the unit.

• The unit is not intended to be used with an external timer or a separate remote control.

• Always disconnect the connection cable by using the plug; do not pull the connecting cable.

• Do not use the unit if the mains cable or plug are damaged.

• Prevent liquids from getting on the plug.

• If the connection cable is damaged, it may only be replaced by the manufacturer, customer service, or a similarly qualified person.

• Do not open the housing under any circumstances.

• Before connecting, compare the connecting data (voltage and frequency) on the type plate with your energy network.

• Ensure the power cable is safely laid to prevent the unit from falling.

• Never use the appliance outdoors; always keep it in a dry place.

• The plug must be removed from the socket after every use and prior to cleaning.

• To avoid overheating, do not keep grinding for more than 1 minute.

• This unit is suitable for grinding coffee beans exclusively. Do not attempt to grind ground coffee again.

• Do not use any aggressive or abrasive detergents and no solvents.

• Do not scratch off stubborn soiling with hard objects.

Mortal danger is caused by contact with energized cables or components! Please observe the following safety instructions to prevent exposure to electric current:

• Do not use the unit if the mains cable or plug are damaged.

• In this case, you should let the Graef Customer Service install a new connection cable before using the appliance again. This may also be done by an authorized specialist.

• Do not open the housing under any circumstances. When touching live connections and if the electric and mechanical structure is changed, there is danger of electric shock.

• Never touch live parts. They may cause an electric shock or even may lead to death.

The GRAEF CM8011 is not intended for commercial use. Use the unit for grinding coffee beans only. This appliance is intended for domestic and similar use, such as:

• Staff kitchens in shops and offices

• In agricultural estates

• By guests in hotels, motels, and other living quarters

• In bed and breakfast boarding houses

Use only for applications akin to households. Any other or exceeding use shall not be considered intended.

When unpacking your GRAEF CM8011, proceed as follows:

1. Remove the unit from the box.

2. Remove the packaging parts.

3. Remove any stickers on the unit. Do not remove the type plate!

For safe and fault-free operation of the GRAEF CM8011, the installation location must meet the following requirements:

• The unit has to be placed on a solid, flat, horizontal, and non-slipping surface with a sufficient weight-carrying capacity.

• Make sure that the unit cannot topple over.

• Choose the location in such a way that children cannot reach the supply line of the unit.

• Do not place the appliance on hot surfaces, such as hotplates, or near them.

• Never use the unit in the open, and store in a dry location.

• The unit is not designed for installation in a wall or a built-in cupboard.

• Do not set up the unit in a hot, wet or moist environment.

• The socket has to be easily accessible so that the power cable can be removed easily in case of emergency.

For safe and fault-free operation of the GRAEF CM8011, the following requirements have to be met during the electrical connection:

• Before connecting the unit, compare the connecting data (voltage and frequency) on the type plate with those of your energy network. These details must correspond so that no damage occurs to the unit. In case of uncertainty, contact a qualified electrician.

• The socket has to be protected at least by a 10 amps circuit breaker.

• Make sure that the power cable is not damaged and is not laid across hot surfaces or sharp edges.

• The connecting cable must not be stretched tightly.

• The electric safety of the unit is ensured only when it is connected to a socket with a protective conductor installed correctly. Operation on a socket without a protective conductor is forbidden.

Before the first use of your GRAEF CM8011, clean all parts as described in the “Cleaning and care” chapter. Then, follow these steps to set up the coffee bean container:

1. Place the coffee bean container on the unit, observing the locking mechanism.

2. Press the coffee bean container down and turn it clockwise (approx. 30 deg.).

3. Open the outlet of the coffee bean container by using the sliding closure.

On the GRAEF CM8011, the grain size of the coffee grounds can be varied using the different settings of the grinding degree. Precise data on the grinding degree cannot be given as many different factors play a role, such as type of coffee/bean, room temperature, personal taste, etc.

In general, it can be said that a finer grinding degree is used for Espresso, a medium grinding degree for filter coffee, and a coarser grinding degree is set for French Press.

Important Notes:

• The finer the grinding degree, the longer the grinding process.

• If you use a very fine grinding degree, it may happen that the coffee agglutinates. If several coffee bean lumps block the grinding mechanism, tap the coffee bean container.

To grind coffee using the permanent functionality of the GRAEF CM8011, follow these steps:

1. Insert the plug into the socket.

2. Fill the coffee bean container with whole coffee beans.

3. Open the outlet of the coffee bean container by using the sliding closure.

4. Set the requested grinding degree.

5. Place the coffee grounds container below the outlet.

6. Set the switch to “ON”. The grinding process will start automatically.

7. After completing the grinding process, set the switch to “OFF”.

To grind coffee directly into the filter holder (portafilter) with your GRAEF CM8011, please follow these steps:

1. Use the large or the small filter holder retainer as requested.

2. Open the outlet of the coffee bean container by using the sliding closure.

3. Set the requested grinding degree.

4. Hold the filter holder between the filter holder retainer.

5. Set the switch to “AUTO”.

6. Press the filter holder against the contact switch between the filter holder retainer. The grinding process will start automatically.

7. As soon as the filter holder is sufficiently filled, pull it back. The grinding process will stop automatically.

Depending on use, clean the GRAEF CM8011 at least once a week. Before cleaning, always remove the power plug.

• Use a soft and moist cloth to clean the outer surfaces of the unit. Use a mild detergent in case of heavy soiling.

• Remove the coffee bean container: hold the grinding ring, press the bean container down, and turn it counter-clockwise. Make sure that the run-through of the coffee beans is closed on the coffee bean container.

• Place the unused beans in an airtight container to keep the flavour.

• Clean the coffee bean container and the coffee grounds container in warm water using a little washing-up liquid.

• Afterwards, dry the containers well.

To clean the grinding mechanism of your GRAEF CM8011, follow these steps:

1. Remove the power plug.

2. Remove the coffee bean container as described in the chapter titled “Cleaning”.

3. Turn the grinding ring to the right as far as possible.

4. Press the “PUSH” button, and continue to turn the grinding ring to the right.

5. When the two arrows point at each other exactly, you can remove the grinding ring together with the upper grinding mechanism. Remove the upper grinding mechanism from the grinding ring.

6. Clean the lower and upper grinding mechanism with the enclosed brush.

7. After cleaning, first of all place the grinding ring back on to the motor block (arrow pointing to arrow).

8. Now place the upper grinding mechanism.

9. Turn the grinding ring clockwise to the requested grinding degree.

Important: To test whether the grinding mechanism has been set correctly, turn the grinding ring to “coarse” (e.g., level 35) and try to pull out the grinding mechanism by the metal ring. If it cannot be removed, it has been installed correctly.

10. Place the coffee bean container on the unit.

By means of the fine adjustment of the upper grinding mechanism on the GRAEF CM8011, you can set the grinding degree to be coarser or finer. Proceed as follows:

1. Remove the upper grinding mechanism.

2. Use a screwdriver to remove the small screws.

3. Turn the grinding mechanism one stop to the right (coarser) or left (finer).

Important: Set the grinding mechanism two to three stops to the right or left maximum at first.

4. Screw the screws back in again.

5. Place the upper grinding mechanism back in again.

Here are some tips for using your GRAEF CM8011:

• Different beans (oily, old, freshly ground) react differently.

• Choose a finer grinding degree for Espresso, medium for filter coffee, and coarse for French Press.

• Select a coarser grind setting if no coffee powder falls out of the ejector even though the machine is running.

• Room temperature and air humidity affect the coffee beans.

• The tendency for a correct Espresso grind is when the grounds start to go lumpy, forming small to medium-sized lumps that spread again when dropping out. The grounds should have a fine feel.

• Finding the right grinding degree is crucial for the coffee extraction time. An incorrect degree can lead to under or over-extraction.

• There is no single “perfect grinding degree.” Everyone should find their ideal setting based on taste preferences.

• The setting of the grinding degree should also take into consideration the contact pressure and the dosage, as well as the roasting degree of the bean used. Keep contact pressure and dosage constant while adjusting the grind.

• The finer the grinding degree, the longer the grinder needs.

• The grinding degree may need to be corrected over time as the quality, moisture content, and freshness of the bean can change with the surroundings. This can be corrected by trying out and adapting the grinding degree and/or contact pressure if the Espresso runs into the cup too quickly or too slowly.
