How do I mount the pan and dough blade in the WELBILT ABM-150R?
1. Place the pan on the Homemade Bakery and turn it clockwise to lock it in place.
2. Place the dough blade on the shaft inside the pan.
Note: Whenever touching the Bakery pan during or after baking, always use oven mitts to avoid getting burned.

How do I set the clock on my WELBILT ABM-150R?
In order to begin using the Bakery, you have to set the clock for the current time of day.
1. Plug the power cord into an AC outlet. The clock display will flash ON and OFF at 12:00 A.M.
2. Press the “H” button to set the current hour and the “M” button to set the minutes. Keep in mind the difference between A.M. and P.M.
3. By continuously pressing “H” or “M” you can fast forward to the time desired.
4. Press CLOCK. The Bakery will indicate that the current time has been programmed in with a beep.
5. If a mistake is made, press CLOCK again and start from Step 2.
Caution: Do not operate the unit immediately after baking is completed or when the temperature inside the oven is higher than 131°F (55°C). Otherwise, the microprocessor will not activate the Bakery.
How do I use the automatic bread program on the WELBILT ABM-150R?
Use this program for automatically making Yeast Bread, Whole Grain Bread, and Quick Bread from start to finish, including cool down.
1. Properly position the dough blade and pan.
2. Add ingredients in the order given in the recipe.
3. First put active dry yeast in the Bakery pan. For best results, add yeast near the edge of the pan.
4. Add remaining ingredients. All ingredients must be at room temperature, unless otherwise specified.
5. Press SELECT until the indicator light for the bread category you desire is lit.
6. Press BAKING CONTROL for the desired darkness of the crust.
7. Press START.
8. The bread will be ready in approximately 4 hours.
9. If an error was made and you wish to stop this program, press and hold the CLEAR/STOP button for more than 1 minute.
10. After baking, the bread will automatically cool for approximately 20 to 30 minutes.
11. To remove the pan from the Bakery after cool down, lift the lid. Turn the pan counter clockwise and lift up and out.
12. Turn the pan upside down on a clean surface and slide the bread out.
13. Using a kitchen utensil, carefully remove the dough blade from the bottom of the baked loaf of bread. The dough blade will be extremely hot, so handle with care.
14. Cut the bread as desired.
How do I make dough using the Mixing Program on the WELBILT ABM-150R?
Select the Mixing Program to make dough for cookies and pastries. This program mixes for a maximum of 30 minutes.
1. Properly position the dough blade and pan.
2. Add the first ingredient or ingredients in the Bakery pan.
3. Press SELECT so that the Mixing indicator lights up.
4. Press START.
5. The entire program runs for 15 minutes.
6. Add ingredients step by step as indicated in your recipe. The Bakery beeps once at the end of every minute.
7. Never add too many ingredients at the same time.
8. Never over mix the dough.
9. Press CLEAR/STOP when the dough appears blended or when indicated in the recipe.
10. Proceed with instructions given in your recipe for shaping and baking.
11. When working with loose doughs or batters, move quickly when removing the pan so that dough/batter doesn’t drip into the unit. If a spill occurs, unplug the Bakery and wipe it up with a clean, wet cloth.
How do I use the Multi-Logic® Program on the WELBILT ABM-150R?
This programmable feature allows you to set the length of or eliminate the second kneading, rising, and baking cycles for yeast dough recipes.
1. Properly position the dough blade and pan.
2. Add ingredients in the order given in the recipe.
3. First put active dry yeast in the Bakery pan, near the edge for best results.
4. Add remaining ingredients. All ingredients must be at room temperature, unless otherwise specified.
5. Press SELECT until the indicator light for MULTI-LOGIC® is lit.
6. Press MULTI-LOGIC® so that the kneading indicator light flashes.
7. Press “H” or “M” until the second kneading time you desire appears in the display (0 to 40 minutes).
8. Press MULTI-LOGIC® to lock it in. The Rising indicator light will flash.
9. Press “H” or “M” until the second rising time you desire appears on the display (0 to 90 minutes).
10. Press MULTI-LOGIC® to lock it in. The Baking indicator light will flash.
11. Set the baking time (0 to 60 minutes) using “H” or “M” and press MULTI-LOGIC® to lock it in. If baking is set at “0” minutes, the cooling cycle will be cancelled.
12. If an error is made during programming, press MULTI-LOGIC® and re-program.
13. Press START.
14. The dough or bread will be ready according to the program you have created.
15. If bread is being baked in the Bakery, it will automatically cool down for approximately 20-30 minutes.
To make dough only, program the 2nd Kneading and Rising as desired. Set Baking at “0” minutes so that dough does not bake.

How do I set the programmable timer on my WELBILT ABM-150R?
This feature allows you to begin preparation of yeast and whole grain breads and doughs up to 12 hours before you want them ready.
1. Press SELECT for Yeast Bread, Whole Grain Bread or Multi-Logic®.
2. If using Multi-Logic®, refer to the programming instructions.
3. Press BAKING CONTROL for the desired darkness of the crust if you plan to bake the bread in the Bakery.
4. Press TIMER SET. The display will flash ON and OFF 12:00 A.M.
5. Set the hour and minutes you want your bread or dough to be ready by pressing “H” or “M”.
6. When programming the time you want, keep in mind the difference between AM and PM.
7. Press TIMER SET to lock in the programmed time. The Bakery will beep once and the TIMER indicator light will be lit.
8. Proceed with adding ingredients as per the recipe instructions.
9. To verify the programmed time, press TIMER SET. The programmed time will appear for 3 seconds and then return to the current time.
Note: To prevent ingredients from deteriorating, the timer cannot be programmed for periods over 12 hours. If you make a mistake, the unit will generate a “long beep” error sound. In this case, reset the time display to the correct time.

What should I do if my WELBILT ABM-150R unit does not start?
If the unit does not start, check the following:
Is the power cord plugged in? If not, plug the power cord in securely.
Does the clock display indicate OEO2? The unit will not operate if the oven’s interior temperature is above 131°F, such as immediately after baking. Open the lid and let it cool down.
Does the clock display indicate OEO1? If so, contact qualified service personnel.
What should I do if my WELBILT ABM-150R dough does not knead or mix?
If the dough is not kneading or mixing, check the following:
Is the dough blade attached correctly? If not, remove the pan, take out the ingredients, and attach the dough blade correctly.

Is the dough blade properly attached? If not, attach the dough blade correctly.
Was the glass cover opened during baking? Keep the glass cover closed during baking.
Does the clock display read HEO1 or HEO2? Contact qualified service personnel.
Why can’t I bake bread with the program timer on my WELBILT ABM-150R?

How do I clean and care for my WELBILT ABM-150R?
MAIN UNIT
• Unplug the power cord from the AC outlet before cleaning.
• Gently wipe off dirt with a damp sponge or soft cloth. Wipe dry with a clean cloth.
• Never use any chemical cleaners, abrasive powders, or scouring pads.
• Non-kitchen detergents or bleach should not be used.
PAN AND DOUGH BLADE
• Clean these parts thoroughly using a sponge or soft cloth dampened in lukewarm water and mild dishwashing liquid. After cleaning, dry them completely and store them inside the main unit.
• NOTE: The Pan is coated with fluorine resin. Use only plastic utensils to avoid scratching or damaging this coating.
BAKING CRUMBS
• Remove flour and bread crumbs and all foreign matter from the inside of the oven with a damp cloth.
SHAFT
• Remove all crumbs after each use. Use a sponge or cloth to wipe clean.
PACKING
• If crumbs accumulate on the bottom of the main unit, remove the packing and clean thoroughly with a damp sponge or soft cloth.
• Be sure to reinstall the packing properly or water may leak from the pan.
AIR INTAKE
• Occasionally clean the air intake vent on the bottom of the unit to prevent it from clogging. Use a vacuum cleaner crevice tool or soft brush to do this.
What happens if the power goes out while my WELBILT ABM-150R is in use?
If the power is cut during use due to a power failure or unplugging the unit, the bread making process will end. In this case, remove the ingredients from the inner pot, replace them with fresh ingredients, and start over from the beginning.
Please note that if the power is cut off during the programmed time, the clock display will flash 12:00 on and off, making it impossible to continue bread making.

Cause: Ingredients were not at room temperature or were not placed in the recommended order.
Solution: Ingredients must be at room temperature unless otherwise noted. Place ingredients in the Bakery pan in the recommended order.
Cause: Yeast did not activate.
Solution: Be certain yeast is fresh; check the expiration date on the package. Do not reduce the amount of sugar or sweetener called for in the recipe; do not use artificial sweeteners. Too much salt can inhibit dough from rising; use the amount specified in the recipe.
Cause: Low gluten flour was used.
Solution: Unless otherwise noted, always use bread flour.
Cause: High altitude.
Solution: For every 1000 feet above 3000 feet sea level, reduce the water by 1 tablespoon, up to a maximum of 4 tablespoons.
Why did my bread collapse when baked in the WELBILT ABM-150R?
Cause: Dough rose unevenly.
Solution: Make sure water is no warmer than room temperature (70°-80°F). Flour is very absorbent and can absorb moisture from the air during periods of excessive humidity. If the dough is too sticky, the bread can collapse. Reduce water or liquid in the recipe by up to 4 tablespoons. Let the appliance knead for 1 to 2 minutes; if the dough appears too dry, add additional water 1 tablespoon at a time, up to 3 tablespoons.
Why does my bread touch the glass dome of the WELBILT ABM-150R?
Cause: Weather is very hot and/or humid.
Solution: Do not bake bread in the Bakery until it is cooler and less humid. Reduce yeast by 25% to 50%. For example, if a recipe calls for 2 teaspoons, try 1.5 teaspoons down to 1 teaspoon.
Cause: Too much or the wrong type of yeast was used.
Solution: Use the specified amount of yeast. Do not use fast-rising yeast; only use active dry yeast.
