How do I raise the broiler rack?

Raise the broiler rack to its full elevation by squeezing the trigger and pushing the handle to the lowest position. Release the trigger lever and hold the handle until the trigger lock pin has engaged firmly in the hole on the quadrant.


What do I need to confirm before using the broiler?

Confirm that cleaning hatch covers at the front of the body are closed and hatched.


How do I connect the starter lighter assembly?

Connect the quick disconnect on the starter lighter assembly to the female quick disconnect in the supply line, making sure the two connecting halves of the quick disconnect are completely locked together.


How do I use the starter lighter?

Position the starter lighter in the body of the appliance. Open the gas valve gradually, immediately lighting the perforated end with a match. When the flame is suitable, carefully place a bag of Mesquite (or loose Mesquite pieces) over the lighter flames, making sure that flames are not smothered.


What do I do when the Mesquite has caught and is burning efficiently?

Close the gas valve and remove the starter lighter from the broiler, being careful not to bring hot Mesquite out with it.

A hatch has been provided at the front of the appliance to enable the burnt discarded Mesquite, etc., to be brushed out into a suitable container at the conclusion of the work shift.


How should I place the Mesquite?

Do not bank Mesquite in one particular position regularly. This will cause warping of the broiler rack. Mesquite thickness (MASS) should be as even as possible. Use the rack mechanism to arrive at zone temperature levels.


What do I do if no gas is available for the starter lighter?

If no gas is available, the Mesquite can remain in the bag it was obtained in, and the paper bag can be ignited.


How do I maintain the broiler?

It is important to keep the appliance clean. Due to the high temperatures generated by the Mesquite during “CLEAN OUT,” a build-up of a hard “skin” could occur on the rack and moving parts. The following cleaning suggestions should be practiced at the close of each work shift.


How do I clean the rack?

When reasonably cool and manageable, and with the rack raised to its highest position, remove the rack. Using a wire brush or any hard bristle brush and mild detergent in warm water, thoroughly clean the rack on all surfaces. Rinse well with clean water. Dry and oil lightly with vegetable oil.


How do I remove burnt Mesquite from the broiler body?

With a container of a suitable size positioned below the cleaning hatch, open the cleaning hatch cover. With a push tool and brush, proceed to remove burned Mesquite from the broiler body. Large pieces of unburned Mesquite can be put aside and reused.


How do I clean the center post?

Lightly scrape off any “baked-on” grease and cinder residue, which may have built up on the center post. When satisfied that the post is free and clear of build-up and dusts, lower and raise the post several times. Depending on usage, the center post should be removed occasionally for a thorough cleaning. Use a strong cleaning solution or oven cleaner to remove burned-on grease and carbon. Emory cloth may be used to polish the shaft.


How do I clean the center tube?

Apply a degreasing type cleaner to the inside of the shaft tube and use the special stainless brush provided. Rinse or wipe clean and replace the shaft.


What safety precaution should I take when cleaning the center tube?

Be careful to use eye protection.
