The standard equipment includes a cookbook, operator’s manual, registration card, wood box, wood box housing, wood box handle, grills, side racks, a spare heating element, a drain pan (except for the SM360), wood chunks, pre-installed casters, and a sauce and spice sample kit. The number of grills, the type of drain pan, the amount of wood chunks, and the type of casters vary depending on the specific model (SM160, SM260, or SM360).


What are the general installation instructions for the Cookshack smokers?

Local code officials and a commercial kitchen ventilation contractor should be consulted before installation to determine if a permit is needed. The unit must be installed per state and local fire codes and must meet NFPA 96 in the United States. The unit is very heavy, requiring extra care when unloading and moving. Ventilation is required for proper operation.


What are the location requirements for installing a Cookshack smoker?

Stationary installation should be on a level surface. Keep the smoker oven free from combustible materials, allowing an 18” clearance space, but with a minimum spacing requirement of 6” from combustible material. For non-combustible materials, ensure enough room to open the door for loading and unloading product (SM160- 21”, SM260- 27”, SM360- 48”). A minimum of 1” clearance around all sides is also required.


What are the venting options for a Cookshack smoker?

A small amount of smoke will escape from the top of the oven and around the door. Three venting methods can be used, and local authorities should be consulted to determine which method meets local codes. The options are: placing the oven under a Class 2 hood; direct venting by suspending a 4” diameter pipe at least 3” above the vent hole on top of the smoker, running outdoors or to an existing hood; or using an optional Smokehood from Cookshack. Cookshack Smokehood part numbers are PA001 for SM160, PA002 for SM260, and PA003 for SM360.


How do you season a Cookshack smoker?

The interior needs to be “broken in” or seasoned before the first use. Place 2 ounces (1-2 pieces) of wood chunks inside each wood box and insert it between the heating elements. Never place more than 6 ounces of wood in the SM160, 12 ounces in the SM260, or 48 ounces in the SM360. Always insert the wood box in the proper position and let the smoker run without meat for a minimum of 4 hours at 225ºF.


How do you select wood for a Cookshack smoker?

Start with a small amount of wood and increase as needed to achieve the desired smoky flavor. Personal taste dictates the amount of wood, which varies. Start with two ounces of wood and adjust upward if more smoke flavor is desired. Wood should be used dry, and any fruit or nut hardwood with good flavoring abilities can be used. Popular woods are hickory, mesquite, apple, and cherry, available from Cookshack. Other regional favorites include alder, beech, pecan, maple, oak, buttonwood, and mangrove. Use local woods only if chunks are selected and sized properly.


What are the general operating instructions for a Cookshack smoker?

The smoker oven is intended for use as a food cooker. While equipped with a HOLD cycle, it was not designed as a warm holding cabinet. Line the bottom of the smoker with heavy-duty aluminum foil, creating a hole for the drain. Cover the heat shield with heavy-duty aluminum foil for easy cleaning. Position the drain pan (provided with SM160 and SM260) beneath the drain hole and the trough drain hole. Insert the wood-filled wood box into its proper position and do not change its position during the cooking cycle. The wood box covers the burner and protects it from grease.


What are the product loading instructions for a Cookshack smoker?

The maximum cooking capacity per load varies by model: SM160 (120 lbs pork butts, 100 lbs briskets, 50 lbs ribs, 20 whole chickens), SM260 (240 lbs pork butts, 200 lbs briskets, 100 lbs ribs, 40 whole chickens), SM360 (550 lbs pork butts, 500 lbs briskets, 270 lbs ribs, 100 whole chickens). Keep meat approximately 1” from all oven walls. Load less meat on the bottom grill to ensure airflow to the top. Never blanket load the bottom rack. Close the door and latch securely.


What are the control panel operations for a Cookshack smoker?

Recommended cooking times and temperatures are based on full loads with no holding cycle. Adjust cooking time and temperature for larger or smaller loads, or when adding holding time. An audible signal indicates the cook cycle is complete and the oven is going to the Hold Temperature Mode. Briefly press the corresponding button and press “OK” to see the set smoking temperature, cooking temperature, probe temperature, or holding temperature.


How do you use the Smoke/Cook Mode (3 stage cooking) on a Cookshack smoker?

Smoke/Cook Mode is for standard operation. Product absorbs more smoke at temperatures of 180°F or below, making 3 stage cooking ideal for increasing smoke flavor. The smoker oven will cook at the set smoking temperature for the set smoking time, then at the set cooking temperature for the set cooking time. The controller then changes to the set holding temperature until manually shut down. All presets are programmable. To set a preset button to your own preferences, make all settings as desired following the steps listed for each Mode Setting. Once your settings have been made, hold the preset button down for 5 seconds to save the settings. The display will read “Program [#] Saved” if done correctly. All saved settings and programs will be lost if a factory reset is performed.


How do you download data using the USB function on the Cookshack smoker?

With the IQ5 controller, you can download smoking, cooking, and holding logs to a FAT formatted USB flash drive. The IQ5 Controller holds 1023 cycles, approximately 512 hours of cook time. To use this feature: plug the flash drive into the USB port while the smoker is on; press and hold the USB DATA button until the digital controller reads “File Saved”; it will then ask “Do you want to clear log?”; press the UP or DOWN arrow until the controller reads “Yes” (clearing the log stops accidental data loss); press OK.


What are the shut down procedures for the Cookshack smoker?

Always disconnect the oven from its electrical supply before cleaning or servicing. When the product is finished, turn the Master Switch to the OFF position. Wait ten minutes before opening the oven door to check the product for doneness. When the product is done to your satisfaction, remove from the smoker. After each use, follow these shutdown procedures: Press Start/Stop button for 5 seconds; Press the Power button; Switch the master switch to OFF; Unplug smoker from the outlet; Allow oven to cool; After allowing the oven to cool, carefully remove the wood box from the oven and douse the contents with water. Disconnect the oven from the power supply and allow it to cool. Remove the grills and racks; scrape and wash with soap and water (the racks and grills can go into the dishwasher, but do not use caustic oven cleaners as they will destroy the plating). Remove wood and ash remnants by discarding the aluminum foil covering (douse wood with water before discarding). Remove all grease from the interior of the oven using paper towels or cloths (do not use caustic cleaners as this will damage the heating element, but if you use oven cleaners, make sure liquid does not come into contact with the heating element). Empty or remove drippings from the drip pan. Scrape loose grease and scale from walls with a plastic flat edge scraper. Replace racks and grills. The bottom of the oven must be kept clean; change the foil in the bottom of the oven and from the top of the wood box after each cook. Ensure the drain hole is open at all times; if the drain becomes plugged, the oven bottom can fill with grease and create a fire hazard.

What procedures should I observe if I am advised to return merchandise to the factory for repair or replacement?

You will be issued a return number. A Customer Service Representative will issue a return number and/or mail an instruction form (called a Return Merchandise Authorization) for returning the merchandise with the return number on it. All return merchandise must have a return number. Do not return merchandise without a return number. Attach the return number to the merchandise. If you were sent a Return Merchandise Authorization, attach it to the merchandise you are returning. If you were issued a RETURN NUMBER by phone and not sent a Return Merchandise Authorization, attach a note to the merchandise with your name, address and RETURN NUMBER. Print the RETURN NUMBER on the outside of the return packaging. Ship the merchandise back to Cookshack. Return the merchandise to Cookshack, Inc., shipping prepaid, F.O.B. destination, in the original container or equivalent. How is merchandise repaired or replaced under warranty?

Replacement or repairing defective merchandise is at Cookshack, Inc.’s option. If repair of merchandise is deemed necessary by Cookshack, Inc., you will be instructed as to the necessary arrangements in order to affect the repair of the merchandise. If replacement merchandise is deemed necessary by Cookshack, Inc., you will be invoiced for the replacement merchandise upon shipment. Credit for merchandise under warranty deemed to be defective by Cookshack, Inc. will be issued upon return of the defective merchandise.


When may credit be denied for returned merchandise?

Credit may be denied if the returned merchandise is not found to be defective by Cookshack, Inc.; if it is not under warranty; if it is not received at Cookshack, Inc. 30 days after your RETURN NUMBER is issued; if it is damaged due to abuse, misuse, misapplication or accident; if it has been serviced or modified by any other than an authorized Cookshack, Inc. service agent; is not returned with an RETURN NUMBER; is not in clean condition; is not complete; is damaged or lost in transit.
