What are the key safety warnings for operating this appliance?

Do not use or store gasoline or other flammable vapors or liquids in the vicinity of this or any other appliance.

Improper installation, adjustments, alteration, service or maintenance can cause property damage, injury or death. Read the installation, operating and maintenance instructions thoroughly before installing or servicing this equipment.

Failure to read and understand this manual completely could result in serious injury or death. Be sure ALL operators read, understand and have access to this manual at all times.

Rags or paper containing cooking oil can catch fire if exposed to heat. Laundering will not remove the oil. Dispose of all oil-soiled papers and rags in a trash container that is in a ventilated area away from all cooking equipment or other heat sources such as direct sunlight.

If at any time the POWER ON light does not turn off when the power switch is moved to the OFF position, disconnect the power to the fryer and contact your local Broaster Company representative for service immediately.

DO NOT operate unit without filter pan and filter pan cover in its proper position. Filter pan cover must be wiped clean after each filtering cycle.

Make sure Pressure Relief Valve and Pressure Gauge ports on bottom of cover are clear of any oil or grease buildup.

Make sure a restraining device is used that complies with the Standard for Commercial Gas Ranges, ANSI Z83.11/ CSA 1.8 to guard against transmission of strain to the gas connectors. Failure to restrain the fryer could allow it to move, causing hot shortening to spill out, or a possible break in the gas line causing an explosive condition.

High voltage will be encountered in several instances when checking and repairing electrical components. Only persons trained and equipped for checking high voltage shall undertake such repairs.

Water & Hot Oil Do Not Mix! Do not pour contents back into cooking well or filter. Bodily injury may occur!

Do not operate this fryer without the filter pan & clean cover in place.

Do not operate this fryer without the filter in place and piping securely connected.

Hot Shortening! Do not use the filter container to transport hot shortening.


What should I do if warning signs are missing or illegible?

If warning signs or safety devices are not in place or legible, the Broaster Company should be notified in writing of the lack of warning signs and the existence of an unsafe condition.

If you need replacement warning signs or manuals, contact an authorized Broaster Company representative or the Broaster Company Service Department at (608) 365-0193.


What are the input voltage specifications?

ES24G: 120 VAC, 1PH

ES24E: 208 or 230 VAC, 3PH


What type of power input is the ES24E designed for?

The ES24E is designed to operate on 3-phase input ONLY. DO NOT connect to 1-phase power.


What should I do if the unit will not turn on?

If no component operates, check main power supply. Be sure main circuit breaker is ON and main fuses are good.

Perform the following:

1. Disconnect main power supply.

2. Be sure all connections are tight. If power supply is proper, see TROUBLESHOOTING section.


What do the Power Switch and Dual Cover Lift Switches do?

1. Power Switch: This switch has two positions: ON (UP) or OFF (DOWN).

2. Touch Control Screen: Touching this screen controls the many options of the fryer.

3. Dual Cover Lift Switches: These switches control the cooking well cover. Both for down, one for up.


How do I perform the initial setup of the control panel?

On initial power up you may be asked to enter the current date and time, and verify the Serial Number.

If the date and time entry screen appears press the box after “Month” and a keypad will appear. Enter the number of the month and press the enter key. Repeat this action for the Day, Year, Hours, Minutes, AM and PM boxes. When finished press the green OK button in the bottom right corner of the screen.

The next display will ask you if this date should be used to establish the warranty start date. Press the green OK button.

You will then see a display asking you to verify the serial number of your fryer. Enter the serial number using the keyboard and press enter.

Note: The date/time display and the serial number display will not appear again when the power switch is turned off and back on.


What does the CAUTION screen mean during initial setup?

A CAUTION screen will appear to remind you to check the oil level before the heating elements or burner are activated. If the oil is at the proper level, press the green OK button in the bottom right corner of the screen.


How do I change the cook time on the Cook Tab?

The cook time is indicated in the box next to the clock face.

To change the time press the time display twice and a keypad will appear.

Enter the cook time for the product you are cooking; as you enter the time it will appear above the keypad.

To save this time press the enter key and the new time will be entered and the keypad will disappear.

If no entry is made or the enter key is not pressed within 25 seconds, no change is made to the time.


What does the “CUSTOM” display mean during a cook cycle?

When a cooking cycle is started the box below the cook time turns yellow and shows the amount of time remaining in the cycle. The right box displays “CUSTOM”. The word “CUSTOM” also replaces the tabs across the top of the display. “CUSTOM” indicates you are in manual cooking mode.


What happens at the end of a cook cycle?

At the end of the cycle the left box alternates between red and white, the alert sounds and continues until the exhaust valve opens automatically.


How do I turn Auto Comp on or off?

In the upper right corner of the cook time display is the Auto Comp indicator. It will be black if Auto Comp is off and green if Auto-Comp is on.

To turn Auto Comp on or off press the cook time display twice. When the keypad appears the Auto Comp toggle switch is in the upper right corner of the keypad. If the button is red Auto Comp is off, if it is green Auto Comp is on. Press the Auto Comp button to change it then press the enter key.

The Broaster Company recommends Auto Comp should be on when cooking a load of product.


What does the temperature display show when the fryer is first turned on?

When the fryer is turned on in the morning this box will be yellow and “Heat On” will be displayed. The temperature will alternate between “LOW” and the set temperature until the oil temperature reaches the set temperature.

When the oil temperature reaches the set temperature the box turns green indicating the oil is up to the set temperature. This also occurs anytime the temperature is changed or after a filtering cycle.


How do I switch between “Set” and “Actual” temperature display?

The temperature shown in the temperature box can be either the “Set” temperature or the “Actual” temperature as indicated above the thermometer.

To change from one to the other press and hold anywhere in the temperature box for 3 seconds. An alert will sound when you press the box and a second alert will sound when the change is made.


How do I set the cooking temperature?

To set the temperature, press the temperature box twice and a keypad will appear.

Enter the temperature for the product you want to cook; as you enter the temperature, it will appear above the keypad.

To save this temperature press the enter key.


How do I select a product preset?

All of Broaster Company’s products are pre-loaded into the memory of the control and can be selected when you want to cook that product. The cook time and cook temperature for that product will be automatically entered in the Time and Temperature displays.

Press the “Select Preset” box and a menu of the products will be displayed. Tap the product you wish to select.

If the wrong product comes up, tap the preset box again and the menu will reappear.

When the item has been selected a picture of the item will appear in the left box and a description of the item will appear in the right box.


How do I start a cook cycle using a preset?

After selecting a preset, check the temperature box.

If the temperature box is green, it is all right to start a cook cycle.

If it turns yellow, the temperature is too low to start a load. Wait until the temperature display turns green before starting a cook cycle.

When the temperature box is green, load the product into the well and close the cover for auto start of pressure cook or touch start for open fry. This will start the cycle timer counting down.

When the load is done an alert will signal that the cooking cycle is complete.

When a cook cycle is started using a preset, the left box turns yellow and the time remaining in the cycle is displayed. The picture moves to the right box.


What does the “Loads Cooked” counter indicate?

This indicates how many cook cycles have been completed since the last time the counter was reset, or the oil was filtered if the Auto Filter feature is turned off. The maximum cook cycles between filter cycles is 10.


How do I reset the “Loads Cooked” counter?

After filtering, this number can be reset to 0 by tapping the box twice.


How do I start the oil filtering process from the Manage Oil Tab?

Select the Manage Oil tab.

If the filter pan is in place, the “Filter in place. Okay to proceed.” field will be highlighted.

Press the “Filter Oil” area. The Start/Stop Filter Pump screen appears.


What does the “Filter in place. Okay to proceed” message mean?

This message indicates that the filter pan is correctly positioned, and you can proceed with operations like filtering oil.


What happens if the filter pan is not in place when trying to filter?

When the Manage Oil tab is selected and the filter pan is not in place, the only screen you can see is the manual filter screen with the Oil Pan Not in Place warning flashing red and yellow. A CAUTION message will appear on the Start/Stop Filter Pump screen. For safety purposes, the drain valve can only be opened by pressing and holding the Open Drain Valve button for 3 seconds when the pan is not detected.


How do I drain the oil into the filter pan?

On the Start/Stop Filter Pump screen, press and hold the green Open Drain Valve button for 3 seconds to drain the cooking oil into the filter pan.


How do I start the filter pump after draining?

When the cooking oil is completely drained from the cooking well, press the Start Pump button.

The filter running display appears. The Start Pump button changes to Stop Pump and the Open Drain Valve button will change from green to red and will say Close Drain Valve.


What happens after I press the Start Pump button during filtering?

The timer in the middle of the screen starts counting up. The Start Pump button changes to Stop Pump, and the Open Drain Valve button turns red and says Close Drain Valve.

When the timer reaches 5:00 minutes an alert sounds and a reminder flashes. To silence the alert, press the button with the speaker on it.


How long should the filter pump run?

Press the Close Drain Valve button to return the filtered oil to the cooking well.

Allow the filter pump to run until it is pumping bubbles into the cooking well for 20-30 seconds.

Press the Stop Pump button to stop the pump.


How do I return to the Cook Tab after filtering?

Press the back arrow button in the upper left corner. The Caution Display will appear advising the oil level be checked. If the oil level is OK press the green OK button.


How do I fill the fryer with new oil from a bulk storage tank?

1. On the Manage Oil tab, select “Fill with new oil from bulk storage tank”.

2. Screen will display “Initializing Fill Valve”. You will hear the Fill Valve moving.

3. Press and hold Start Pump, release when the desired oil level is reached.


How do I send used oil to a bulk storage tank?

1. On the Manage Oil tab, select the red “Send used oil to bulk storage tank” field.

2. The drain and rear disposal valves will open and the pump start screen will appear.

3. Press Start to begin pumping oil to the bulk disposal system.

4. The pump will start and a timer will count up to a maximum of 5:00. Press Stop when all the oil has been removed from the cooking well.

5. Check when complete to make sure filter pan is completely empty of oil.

6. Press the button indicated by the X in the upper left corner to exit to the Manage Oil tab. The valves will close and the Manage Oil tab screen will appear.


How do I access the Setup Tab?

Press the Setup Tab at the top of the screen.

This tab may or may not be secured.

If it is unsecured the Pin Disabled display will appear. Press the OK button to continue.

If this tab is secured the Enter Pin display will appear. If the Pin number is known, press the box and a keypad will appear. Enter the PIN number and press Enter.


How do I set the date and time?

In the Setup tab, select Time & Date Adjustment. The Set Date & Time display opens.

To set the date and time, press the box after “Month” and a keypad will appear. Enter the number of the month and press the enter key.

Repeat this action for the Day, Year, Hours, Minutes, AM and PM boxes.

When finished press the green OK button or the changes will not be saved.

To leave this display without making a change press the arrow in the upper left corner or the green OK.


How do I change the temperature unit (Fahrenheit/Celsius)?

In the Setup tab, select Temperature. The Temperature Settings Display opens.

Press the box next to “Temperature Units:” to switch between Degrees F (Fahrenheit) and Degrees C (Celsius).

Press OK to save changes.


What does the Manual Time / Temp setting do?

This setting is found under Setup > Temperature.

When Manual Time / Temp is set to ON, it allows changing the time, temperature, and pressure state of the recipe to a custom recipe directly from the Cook Tab.

When Manual Time / Temp is set to OFF, the time, temperature, and pressure state cannot be changed from the Cook Tab and only the preset menu item recipes are available.


How do the Energy Saving Settings work (Energy Save Timer / Auto Shut Off Timer)?

These settings are found under Setup > Energy Save Setting.

OPTION 1: Energy Save Timer: The fryer will go into this mode when the specified idle time has passed. The oil temperature will drop to 270° F (132° C) and remain there until the fryer is prompted, by pressing the green OK button, to resume the normal cooking temperature.

OPTION 2: Auto Shut Off Timer: When this option is set, the control will shut off all heaters after the specified time. You will need to follow instructions on the screen to resume use of the fryer.

Setting either timer to 00:00 will disable the function.


How do I set the Energy Save Timer or Auto Shut Off Timer?

Go to Setup > Energy Save Setting.

Press the time button next to the desired option (Set Energy Save Timer or Set Auto Shut Off Timer). A keypad will appear.

Enter the desired time in HH:MM format. As you enter the hours and minutes they will appear above the keypad.

When the time is entered press the green OK button.


What should I do if the fryer enters energy saving mode?

When the fryer enters the energy saving mode, the display will indicate this. Press the green OK button to resume the normal cooking temperature. The display returns to the normal Cook Tab display and the temperature will be yellow and Low, and the set temp will be alternating. DO NOT start cooking until the temp display is green.


How do I set or change the PIN?

Go to Setup > PIN Maintenance.

When the unit is installed there is no PIN set. To set a pin press the box next to PIN (showing ****) and the key pad screen will appear. Set the 4 digit pin you want and press enter.

Press the box next to PIN on/off to turn the PIN on or off.

Press OK to save.


How do I add a new product preset?

Go to Setup > Presets.

Press the “Add New” button.

An Edit / Create Preset display appears.

1. Enter the name: Press the Edit / Enter Preset Name bar and enter the name using the keyboard.

2. Set the Preset Number: Press the Edit / Enter Preset Number bar and enter the desired position number (defaults to next available).

3. Set Cooking Stages: For each stage (up to five), set the Temp, Time, and Pressure (ON/OFF).

4. Set Auto Comp: Toggle ON or OFF.

5. Set Activity: Set to Yes to show in the Cook Tab preset list, No to hide.

6. Set HACCP Color: Select the appropriate food type color.

7. Press the green OK button to save the new product.


How do I edit an existing product preset?

Go to Setup > Presets.

Press the item you want to edit once. The Edit/Create Preset display appears.

From here you can edit the name, position, time, temperature, pressure state, Auto Comp setting, activity status, and HACCP color using the methods described for adding a new preset.

Press OK to save changes.


How do I edit the name of a preset?

In the Edit/Create Preset screen, press the Edit / Enter Preset Name bar. A typewriter keyboard will appear.

The cursor will be at the end of the name. Press the BACK button to delete letters one at a time.

Delete letters until you reach the desired starting point. Type the new name. Press the Symbol key for numbers and symbols.

When finished, press the ENTER key.


How do I change the position of a preset in the list?

In the Edit/Create Preset screen, press the Edit / Enter Preset Number bar. A number pad will appear.

Enter the number of the position you want this item to appear at, then press the ENTER key.


How do I edit the time and temperature for a preset stage?

In the Edit/Create Preset screen, press the Temp or Time button for the desired stage. A number pad will appear.

Enter the desired cooking temperature or time and press the ENTER button.

If a number is entered and the ENTRY button is not pressed within 30 seconds the number pad will disappear and no changes will be saved.


How do I toggle Comp On/Off for a preset?

In the Edit/Create Preset screen, press the button under the “Comp On/Off” column for the desired stage. This button toggles Auto Comp on or off for that stage.


How do I make a preset active or inactive?

In the Edit/Create Preset screen, press the button under the “Active” column. This button toggles the preset’s visibility in the Cook Tab preset menu.

If the button says Yes, the item appears on the list. If No, it does not.

You can quickly tell when a product is not active because the name and number of the item will be grayed out in the Presets list.


How does Menu Transfer work (Load/Export)?

The Smart Touch control allows a revised menu to be transported from one fryer to other fryers which also have a Smart Touch control. This is done from the Preset tab using the Load Menu and Export Menu buttons along the top of the display using a USB flash drive plugged into the front panel USB port.


How do I load a menu from a flash drive?

1. Plug the flash drive containing the menu file into the USB port in the front panel.

2. Go to Setup > Presets.

3. Press the Load Menu button.

4. If there is more than one menu file, press the bar for the menu you want to load.

5. A “Loading Menu…” box will appear with a progress bar.

6. When the menu is loaded, a box will appear saying “Menu Loaded”. Press the OK button.

7. Remove the flash drive from the USB port.


How do I export the current menu to a flash drive?

1. Plug the flash drive into the USB port in the front panel.

2. Go to Setup > Presets.

3. Press the Export Menu button.

4. The control will ask you for a filename. Press the Enter Menu File Name bar and a keyboard will appear.

5. Enter a name (max 8 characters long) you will recognize then press the ENTER Button.

6. A box will appear that says Exporting Menu… with a progress bar.

7. When the export is complete the box will say “Menu Exported”. Press the OK button.

8. Remove the flash drive from the USB port.


How do I adjust the auto-filter settings (recirculation time, evacuation time)?

Go to Setup > Oil Management. The Oil Settings display appears.

Use the + and – buttons to adjust:

– Time to auto filter at end of Cook Cycle: (Recirculation time, adjusted in 10 second intervals)

– Filter Evacuation Time at end of Filtering: (Adjusted in 30 second intervals, 0=OFF)

Press OK to save changes.


How do I record an oil change in the system?

Go to Setup > Oil Management.

Press the “Oil Changed Today” bar. This enters today’s date and time as a reminder when the oil was last changed.

This also resets the “Loads Cooked” counter (or “Cycles Since Last Filtered” if Auto Filter is off) to 00 on the Cook Tab.

Press OK to save.


How do I change the display language?

Go to Setup > Language Selection.

Press the button for the desired language (e.g., English, Espanol).

Press OK to save the change.


How do I adjust Alert Settings (Volume, Tone, Reminders, Warnings)?

Go to Setup > Alert Settings.

Use the + and – buttons to adjust:

– Alert Volume: Set loud enough to be heard in the kitchen.

– Keypad Volume: Set loud enough to hear while making changes.

– Tone: Choose from a range of tones (low to high).

– Pressure Release at end of Cycle: Set time (seconds, 30 minimum).

Use the ON/OFF buttons to toggle:

– Drain Plugged Warning

– Incomplete Evac. Warning

– Stir/Agitate Reminder

Press OK to save changes.


What does the Filter Reminder Cycles setting do?

This setting appears in Alert Settings only if Auto Filter is disabled.

It sets the number of cook cycles between each oil filter reminder. The Broaster Company recommends 5 cook cycles.

A setting of “0” will disable the filter reminder screen.


What does the Pressure Release at End of Cycle setting do?

Found in Setup > Alert Settings, this allows the pressure to release for a set number of seconds before the cooking time reaches zero. This should be set to 30 seconds minimum.


What do the Drain Plugged Warning and Incomplete Evacuation Warning settings control?

These are found in Setup > Alert Settings.

– Drain Plugged Warning: Controls whether the unit warns the operator that the drain may be clogged.

– Incomplete Evacuation Warning: Controls whether the unit warns the operator that the oil may not have fully returned to the cooking well after the auto-filter evacuation time has expired.


When does the Stir/Agitate Reminder appear?

This alert, enabled in Setup > Alert Settings, appears when 3 conditions occur:

1. When the fryer is first turned on in the morning, this reminder will appear after the oil comes up to the set temperature.

2. After a filter cycle has been completed this reminder will appear after the oil comes up to the set temperature.

3. If the fryer has been setting idle for 2 hours or longer this reminder will appear to alert you to stir the oil to get it to a uniform temperature.

After making adjustments on this display press the green OK button to save the entries.

How do I access the components inside the Power Input Box for service?

1. Disconnect main power supply.

2. Remove the retaining screws from the top of the control panel.

3. Use the tabs to pull the top of the panel out and swing down to the service position.


How do I replace the 24 VDC Power Supply?

1. Access the Power Input Box components.

2. Disconnect wires from the old power supply one by one and connect them to the new power supply.

3. Remove mounting nuts and remove the old power supply.

4. Install the new power supply with wires connected, securing it with mounting nuts.


How do I replace the Control Power Transformer?

This provides power to the controller and is located on the floor of the power input box on the left side toward the front.

1. Access the Power Input Box components.

2. Disconnect the black wire from the black 5 pole levernut.

3. Disconnect the orange wire from the orange 5 pole levernut.

4. Disconnect the blue and yellow wires at the connectors.

5. Remove mounting nuts and remove the transformer. Note: The front transformer may need to be dismounted to get to the mounting nuts of this transformer.

6. Install the new transformer in reverse order.


How do I replace the Ignition Module Power Transformer?

This provides power to the burner ignition module and is located on the floor of the power input box on the left side toward the back.

1. Access the Power Input Box components.

2. Disconnect the black wire from the black 5 pole levernut.

3. Disconnect the orange wire from the orange 5 pole levernut.

4. Disconnect the blue wire from the grounding stud.

5. Remove mounting nuts and remove the transformer.

6. Install the new transformer in reverse order.


How do I replace the Hi Limit Control?

This control disables all power to the controls if the oil temperature goes above the set point.

1. Access the Power Input Box components.

2. Disconnect all wires from the control. Make a note of each wire connection.

3. Remove the mounting nuts from the control.

4. Install the new Hi Limit control in reverse order.


How do I replace the Lift Switches?

These switches operate the cover lift system.

1. Access the Power Input Box components.

2. Disconnect wires from the switch being replaced. Make note of the connection of each wire.

3. To remove the switch, depress the tabs on each end of the switch while putting pressure on the switch to push it out of the panel.

4. Install the new switch in reverse order.


How do I replace the Power Switch?

This is the main power switch.

1. Access the Power Input Box components.

2. Disconnect the black and white wires from the switch. Make note of the wire connections.

3. Push in on the tabs (top and bottom) while applying pressure on the switch to push the switch out of the panel.

4. Install the new switch in reverse order.

5. Reconnect black and white wires to the switch.


How do I replace the USB Port?

This port is used for uploading programs.

1. Access the Power Input Box components.

2. From the front of the panel unscrew the protective cap, then remove the nut holding the port in place.

3. Disconnect the USB cord from the controller board inside the panel.

4. Install the new USB port and cord in reverse order.


How do I replace the Speaker?

1. Access the Power Input Box components.

2. Unplug the speaker wire from the control board.

3. Remove the 3 mounting nuts securing the speaker.

4. Lift out the speaker.

5. Install the new speaker in reverse order.


How do I access the Cover and Yoke for service?

1. Raise the cover 2 to 4 inches above the cooking well.

2. Place a support across the well to prevent the cover from dropping onto the cooking well.

3. Lower cover to within 1″ of the support you placed across the well.

4. Remove the screws (1) from the back of the yoke bar and set aside.

5. Remove the Splash Shield Catch (2) and the Splash Shield Back Panel (3) and set them aside.

6. Unscrew the four screws (9) in the Washer Plate (8) and lift off of Handle (34).

7. Slide Splash Shield (7) toward the bend in handle (34).


How do I completely remove the cover and yoke assembly?

CAUTION: Cover Assembly is very heavy. DO NOT allow cover assembly to fall off the support. Serious injury or damage to the unit may result.

1. Access the cover and yoke for service as previously described.

2. Remove four screws (33), four washers (32) and Basket Hanger Plate (31) from the underside of the cover.

3. Remove two screws (11) and two washers (10) from the ends of the lift arms where they attach to the yoke assembly.

4. Carefully slide cover assembly toward front of unit until it drops onto the support previously placed across the well.


How do I disassemble the Cover and Yoke after removal?

1. Remove the two cover bolts (23) connecting the lifter box to the cover.

2. Lift the yoke bar up. The cover (28) and spacer block (25) will remain.

3. Remove the lifter box (24).

4. Rotate the cover handle to the OPEN position.

5. Using a 3/16” pin punch, drive the roll pin (22) out of the clevis (21).

6. Locate hole A in the flat of the cam (37). Note the position of the cam relative to the handle. Use a stiff wire to tie the handle and cam together after removal.

7. Insert a 1/8 inch pin punch into hole A and drive out the grooved pin. Remove handle from cam.

8. Clean lifter box, handle, cam and yoke bar where lifter box slides up and down.


How do I reassemble the Cover and Yoke?

1. Install cam (37) into yoke bar making sure the step in the cam is down and toward the right end and the handle is in the “cover closed” position.

2. Install handle (34) through splash shield (7) and into yoke bar (14) then into the cam (37) and clevis (21).

3. Align holes in handle and cam then install a new grooved pin (38). Be sure the grooved pin is installed flush with the cam.

4. Reinstall roll pin (22) into clevis (21).

5. Lubricate inside of yoke bar where lifter box slides up and down.

6. Lubricate lifter box then install lifter box into the yoke bar.

7. Lower assembly over the cover (28) and spacer block (25).

8. Align holes in lifter box, spacer block and cover.

9. Install new cover bolts but do not tighten yet. (They will be tightened during the Centering Cover procedure).

10. Lift cover and yoke assembly and place on lift arms. Install washers (10) and bolts (11) into ends of lift arms.

11. Reassemble splash shields and washer plate removed during access.

12. Perform the Centering Cover procedure.


How do I check the Cam Operation?

When handle is rotated, cam (37) moves cover (28) in or out of the cooking well. Cam and spacer block (25) lock the cover when pressure in cooking well pushes up on the cover.


How do I center the cover?

This is important for prevention of steam leaks and keeping O-ring wear to a minimum.

NOTICE: It is important warning sign (6) be placed back into its original position and screws replaced after making this adjustment. If this sign becomes worn or illegible, it must be replaced immediately.

1. Remove screws from both ends of warning sign (6) leaving rivet in place. Swing sign out toward the right.

2. Using a 1/4” allen wrench, loosen but do not remove two cover bolts (23) through holes in top of splash shield (7). (These bolts should have been left loose during reassembly).

3. Move the cover handle to the closed position and place a lubricated O-ring gasket in the groove of the cover.

4. Depress the bottom half of the lift switches to move the cover to its lowest position. Switches must be depressed until the cover stops.

5. Open and close cover several times in cooking well to let cover seek its own center.

6. With cover in CLOSED position, tighten each cover bolt a little at a time while alternating between the two until they are fairly tight.

7. Using a torque wrench, tighten each bolt to a maximum torque of 180 in/lbs or 15 ft/lbs.

8. Reposition warning sign (6) and reinstall screws.


What is the function of the Safety Relief Valve?

The muffler can become obstructed due to previously mentioned operator habits (like excess breading). The obstruction usually forms on the bottom of the tank where the condensate drain tube (12) is connected. The tank will then become filled with liquid. Liquid may be forced up the stack (1) when pressure is released at the end of a cooking cycle.


How do I remove the Exhaust Tank?

1. Disconnect the Condensate Line from the exhaust tank by releasing one of the yellow butterfly clamps (11).

2. Release the exhaust tank from the mounting bracket on the frame by pulling the top release up and twisting to the right to hold it open. Do the same for the bottom release.

3. Pull the stack out of the mounting bracket. Then pull the exhaust tank off of the exhaust tube.


How do I clean the Exhaust Tank?

1. Loosen four latches holding cover and stack (1) to tank, then remove cover. Remove rubber grommet (4) from end of the muffler. Set the tank in a sink and clean thoroughly.

2. Inspect gasket (3). Replace if needed. If replacing gasket, apply small bead of silicone sealant in bottom of gasket groove before installing on to tank.

3. Clean all tubes.

4. Replace grommet (4) if necessary.

1. Loosen the nuts on the left end of the exhaust tank and slide the bracket all the way toward the rear.

4. Pull the tube out of the end of the Exhaust Tank.

What is the function of the Pressure Regulating Valve (21) and how does it operate?

Valve (21) is preset to maintain a maximum pressure of 12-14 psi during a cooking cycle. Pressure may build slowly or remain low when cooking small loads. Add one or two quartered potatoes with product to help build and maintain maximum pressure.

The valve is operated by an actuator which is controlled by the control panel.


How do I remove the Pressure Regulating Valve?

1. Move fryer to a place where access can be made to the left side of the fryer.

2. Remove the left side panel.

3. Carefully remove the ignition box cover by sliding up. Be sure to observe how it fits so it can be put back in place.

4. Disconnect the exhaust valve actuator cord inside the ignition box.

5. Carefully pull the cord out of the box and up through the white cable clamps.

16. Reattach the piping to the pump. Make sure the check valve is on the left side as you look at the pump end.
